Easiest Christmas Cookies (Coconut Macaroons)

We love baking and cooking! It was something that Evan and I bonded over during our early dating years since we did meal prepping for local athletes on the weekend. If you ever catch us watching TV together it's because we're watching The Lost Kitchen or some other cooking show on Food Network or Discovery. 

This is a very simple cookie recipe that my mom has made every Christmas because my dad and I both love coconut. 

IT'S LITERALLY SO EASY.

Ingredients: 

  • I bag of sweetened coconut flakes
  • 1 can (14 oz) of sweetened condensed milk
  • optional: 1 tsp vanilla extract

Directions: 

Pre-heat your oven to 350 degrees Fahrenheit. Mix your coconut flakes and the sweetened condensed milk (and optional vanilla) in a medium bowl. Cover two baking sheets with parchment paper. Use a small cookie scoop to scoop the coconut mix onto the two sheets. With a small scoop you should be able to get all of the mix onto the two sheets (around 16 cookies on each sheet). Bake the cookies for around 15 minutes - make sure if you have to put them on separate shelves that you switch them half way through and turn them around. Cookies in the back and at the bottom of the oven usually cook faster, so switching them around will help with even baking. After 15 minutes or they're getting golden around the edges take them out and and carefully slide the parchment paper onto cooling racks. It's so important to let them cool for awhile so that the outside and bottoms hardens up some. The inside will stay nice and gooey! 

These cookies are super sweet, which is why I like using a small cookie scoop!
